Eating Healthier to Feel Better

I’m on a mission to reduced the amount of processed foods I buy. Ever since I found out I was pregnant with my son I was determined to make sure he would be the healthiest, smartest child he could be. I’ll admit, I let him have snacks and the child whimpers when he sees a Reeses peanut butter cup. He definitely takes after me. But I try to buy organic when possible and make sure we eat lots of fruits and veggies. I’ve always had some tummy troubles and around the holidays they started to get really bad. I’ll admit I was eating lots of junk food. I started searching google to see if I could find a way to relieve some of the symptoms without medicine. Based on my research I found I could be soy intolerant. I started reading the labels on common food I ate and was amazed by how many had soy flour in them. I read that soy could be under so many different names it was hard to avoid it.

So my avoid soy protein mission began. Within days I was less bloated and my clothes fit better. Then I accidentally ate something with soy in it. Instant misery. I think I’ve found the culprit. I’ve been trying hard to avoid it but every few days I forget. I don’t eat out much so I’m not sure how I’m going to handle that.

I’ve substituted zucchini for the carrots and they are just as delicious. I make a double batch on weekends and freeze them so my husband can have a quick healthy breakfast on his way to work.

So my quest has begun to eat healthier to feel better.
